Cole slaw II
3 cups (10 oz) cabbage-shredded
4 medium carrots-shredded (about 11/2 cups)
1/2 cup chopped green pepper
1/4 cup raisins
1/3 cup olive oil
11/4 cup freshly squeezed lemon or lime juice
1 large clove garlic (minced) or 2 shallots (chopped finely)
1/2 cup diced avocado (optional)
1. Put cabbage, carots, green peppers, and raisins in a large bowl
2.Measure oil and juice, add garlic or shallots and mix.
3. Pour over cabbage mixture ant toss.
Add avocado right before serving and toss lightly.
