Spring Potato Salad
non gebrucks; gluten free

ingredients
2 lbs. small red new potatoes
1/4 cup freshly squeezed lemon juice
1/4 cup extra-virgin olive oil
Coarse sea salt or kosher salt
Freshly milled black pepper
1/4 cup snipped fresh chives
1 tbsp fresh dill (optional)
 
directions
1. Peel half inch wide strip from each potato
Steam or boil potatoes approximately 20 minutes or until a fork goes in easily.
2. Put potatoes into a bowl
3. Toss potatoes with rest of ingredients except for chives and dill
4.Add salt and pepper to taste.
5/Add chives and dill
