BEANS and RICE

ingredients directions
  1. Prepare rice as label directs using only 3/4 teaspoon salt
  2. Dice Onions and green pepper.  In a 3 quart saucepan over meduim heat, in hot oil cook onion and green pepper until tender, for about fifteen minutes. Stir in Cajun seasoning; cook one minute longer.
  3. Add beans with their liquid and 1/2 cup water to the onion mixture in sausepan; over high heat heat to boiling.  Reduce heat to low; cover and simmer 5 minutes, stiring occasionally to heat through, and to blend flavors.
  4. To serve, spoon rice on large platter; spoon red-bean mixture on top of rice; garnish with jalapeno pepper.
Makes 4 servings
