2 (16 oz.)cans small red, pink, white or cholent

Prepare rice as label directs using only 3/4 teaspoon
salt
Dice Onions and green pepper. In a 3 quart
saucepan over meduim heat, in hot oil cook onion and green pepper until
tender, for about fifteen minutes. Stir in Cajun seasoning; cook one minute
longer.
Add beans with their liquid and 1/2 cup water to
the onion mixture in sausepan; over high heat heat to boiling. Reduce
heat to low; cover and simmer 5 minutes, stiring occasionally to heat through,
and to blend flavors.
To serve, spoon rice on large platter; spoon red-bean
mixture on top of rice; garnish with jalapeno pepper.
