Tabouli

ingredients
1 cup bulgur wheat
11/2 cups boiling water
1-2 tbsp freshly squeezed lemon juice (to taste)
1 tbsp extra virgin olive oil
1 tsp kosher salt (or to taste)
1 cup fresh chopped parsley and/or mint leaves (more or less to taste)
1 cucumber (chopped)(optional)
1 tomato (chopped)(optional)
freshly ground pepper (to taste)

directions

Put bulgar wheat in a bowl, add the boiling water
Add lemon juice, olive oil and salt, stir
Let sit at room temperature for one hour
Add rest of ingredients
Adjust seasonings
