Passover Fluden
from Henny Brener, Caracas,Venezuela
ingredients
2 cups whole eggs approx. 10 to 12
1 1-4 cups sugar
1 cup matzo meal plus 1 Tbs.
1 cup oil
rind of 1 lemon plus 2 Tblsp. lemon juice
3 Tblsp. dark jam
1 large can chopped walnuts
raisins or dates optional
2 tsp vanilla
directions
Beat all ingredients together' Add nuts last.
Bake in 3 Qt. greased pyrex pan at 300
0
F for 40 minutes
When cool,cut into squares. Freezes well.
