May 29, 2025: "The Vaad HaRabanim of Greater Seattle takes pride in maintaining very high standards of kosher certification as we serve our community. Transparency with the community is important in order to maintain confidence in this endeavor. We would like to clarify the circumstances concerning the recent temporary suspension of certification at Gilie's restaurant.
Firstly, and importantly, nothing non-kosher has been or is currently in the restaurant. Proper kosher certification of a meat restaurant requires strict standards, including as an example, the requirement of hashgacha temidit, the presence of a Vaad approved mashgiach during all food preparation as well as all hours of operation of the restaurant. When a dispute arose concerning the application of our standards, the certification was temporarily suspended until the matter could be resolved. The issue has been resolved and Gilie's is in full compliance with all our strict standards for certification of a Glatt Kosher Pat Yisrael meat restaurant.
"We have full confidence in the kosher status of Gilie's and strongly encourage the community to support it."
